Chef Domenico Francone, originally from Puglia, grew up in a family with a strong culinary tradition. He approached the world of the restaurant industry at a very young age, graduating from the IPSAR "Antonio Turi" in Matera. In his years of study, during winter weekends and the summer months, he began working in a pastry shop and the trattorias in his area. Domenico gained numerous experiences in prestigious Italian and international restaurants. He arrived in Tuscany at the Michelin star Il Ristorante di Banfi in 2008. After the restaurant closed, he moved to London, where he worked at Heinz Beck's starred restaurant Apsleys. A magical and exhausting moment at the same time sparked his desire to continue traveling, but it also stimulated a strong nostalgia to return to live in Tuscany. And it is here that Banfi offers him a second chance: to become Executive Chef of La Taverna. In addition to following La Taverna, supported by a talented brigade both in the dining room and in the kitchen, Domenico also reopens the other restaurant with the name of La Sala dei Grappoli, leading it to achieve the Michelin Star in 2020. Who is Banfi? Banfi, a family-owned wine producer, based in Tuscany, is celebrated worldwide as “Builders of Brunello.” The Mariani family, firmly established as leading importers of fine wine in the US, founded their Banfi vineyard estate in Montalcino in 1978. They assembled a contiguous estate of 2,830 hectares, one-third of the property is under specialized vine, and the balance is shared between olive groves, wheat fields, plum trees, truffle stands, forest, and scrub. The medieval Poggio alle Mura astle crowning the estate, part of Banfi estate since 1983, is lovingly restored as a pioneering beacon for regional hospitality. Just over a year after the founding of Banfi in Montalcino, the Mariani acquired the historic Piedmontese winery Bruzzone, today known as Banfi Piemonte. Since its inception, Banfi Piemonte has undergone constant growth, interspersing an inherent typicity with technological innovation and a distinct vocation for quality sparkling wines. Recently Banfi has approached new Tuscan territories, among the most renowned in the region, such as Bolgheri, Maremma, Chianti, and Chianti Classico. Sustainability commitment for Banfi has distant roots. The company initiated its course of sustainable practices at a time when sustainability was not yet part of the common language by establishing an integrated process taking in high regard three essential factors: each action must be socially fair, environmentally safe and economically feasible at the same time. In 2021, thanks to the long path undertaken through the numerous sustainable initiatives in the territory where it operates and the publication of the Sustainability Report since 2016, Banfi obtains the Equalitas certification. Named after the Australian slang for “Kangaroo”, ROOS was ideated as a getaway oasis in the center of Singapore. The purposefully-designed enclave comes with cozy corners, communal tables, and stunning floor-to-ceiling windows facing a cascading waterfall. Guests are welcome to embrace the ‘no-worries’ attitude of Aussie living with a gourmet exploration of Aussie-inspired brekkie items, all-day grills, handmade pasta, and a selection of Asian food fare brimming with local favourites. The lush cafe setting transforms into a watering hole at night, the island bar serves up an assortment of classic cocktails, craft beers and an impressive selection of curated wines from around the world available by the glass. In collaboration with Penfolds, one of Australia’s leading winemakers, diners in search of premium wines are welcome to step inside the Penfolds Lounge for a full display of wines available for their pleasure.
